What each ingredient does

Rice
Forms the bulk of the dish and absorbs the broth as it cooks, giving it a tender, fluffy texture.
Butter
Fat that browns the rice and onion, adding richness and a nutty, toasted flavour.
Mutton
Contributes savoury, rich meat flavour that seasons the broth and the dish.
Chicken
Adds tender meat and flavour to the broth, which is then absorbed by the rice.
Saffron or curry
Provides colour and aromatic spice that flavours the rice.

The step that matters

Browning the rice in butter. Rice toasted in fat before liquid is added coats the grains, helping them stay separate and giving a nutty aroma. Too little heat or time leaves it pale and flavourless, while too much can scorch the bottom of the pan.

Swap the raisin

  1. Coconutfits better
  2. Lemonfits better
