Cook and strain

  1. Boil until the beans are very soft, then press them through a sieve back into the kettle.

Finish and serve

  1. Add salt, pepper, and cream (or milk and butter) to the beans.

  2. If the soup is too thick, thin it with a little water.

  3. Serve with slices of toasted bread.

What each ingredient does

Dried white beans
Form the body of the soup once softened and pressed through a sieve.
Baking soda
Raises the cooking water's alkalinity, helping the beans soften more quickly.
Cream or milk
Adds richness and a smooth, creamy texture to the soup.
Butter
Adds fat for richness and a silky mouthfeel in the finished soup.

The step that matters

Boil until the beans are very soft. Beans that are not fully softened stay grainy and will not press smoothly through the sieve. Cooking until they are very tender lets the starches break down so the purée is smooth.

Swap the beans

How well each one fits the dish's main ingredients (pepper, cream, butter, bread):

  1. Lima beansfits about as well
  2. Almondfits about as well
  3. Chestnutfits about as well
  4. Beansthe original

Fit is the average pairing score against pepper, cream, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
