What each ingredient does

Eggs
Set into the structure of the omelet as they cook, forming its body.
Milk
Adds moisture and softness, keeping the cooked eggs tender rather than dry.
Butter
Fats the pan and adds richness, helping the eggs release and brown lightly.
Veal
Provides the savory meat filling placed in the center of the omelet.
Ham
Adds salty, savory flavor to the filling alongside the veal.

The step that matters

Lifting the set egg with a fork. Egg proteins set quickly on contact with the hot pan. Lifting the cooked edges lets the still-liquid egg flow beneath, so the omelet cooks evenly and stays tender instead of turning rubbery and dry.
