Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish and becomes firm and tender as it cooks.
Bacon
Its fat flavours the liver and vegetables with a salty, smoky taste.
Onion
Softens and sweetens as it cooks, adding aroma to the dish.
Mushrooms
Release moisture as they cook, adding savoury depth and juiciness.
Flour
Thickens the pan juices into a gravy as it mixes with the hot liquid.

The step that matters

Cook the liver until just done. Liver is thin and lean, so the proteins tighten quickly with heat; overcooking makes it dry and tough, while stopping at the right point keeps it tender.

Swap the onion

How well each one fits the dish's main ingredients (liver, olive, parsley, mushroom, pepper, flour):

  1. Shallotfits better
  2. Spinachfits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against liver, olive, parsley, mushroom, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
