Why it works: Sage and thyme match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,485 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Chicken

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Clean the chickens and singe them.

  2. Prepare stuffing by mixing bread crumbs, sage, thyme, salt, pepper, onion, and melted butter; wet with milk.

  3. Stuff the chickens, sew them up, and tie the wings and legs close to the body.

  4. Rub the chickens all over with coarse sea salt and soft butter.

  5. Dredge the chickens thoroughly with flour.

Roast and baste

  1. Place in a preheated oven at 400°F (200°C) to brown.

  2. Pour enough water into the pan to cover the bottom and baste every 15 minutes until done.

  3. Add more water as it boils away, keeping only enough in the pan to cover the bottom.

  4. Turn the chickens to ensure even browning.

  5. Cook for about 1.5 hours for good-sized chickens.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Bulk up the stuffing and soak up butter and milk to keep it moist.
Butter
Adds fat and richness, helping the skin brown and the meat stay tender.
Flour
Dredging coating that helps the skin brown and crisp in the oven.
Milk
Moistens the bread crumb stuffing so it holds together and stays soft.
Onion
Adds savoury aroma and flavour to the stuffing.

The step that matters

Keeping the pan liquid topped up while basting. Water in the pan must not boil dry, or drippings scorch and the pan smokes. Keeping a thin layer covering the bottom gives steam and moisture while basting helps the skin brown evenly.
