English Tapioca Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Soak the tapioca in ½ pint of milk.

  2. Pour the soaked tapioca into a stoneware jar.

  3. Set the jar in a pot of warm water.

  4. Heat until it comes to a boil and the tapioca is soft.

  5. Let it cool while you prepare the custard.

Make the custard

  1. Beat the eggs very light.

  2. Mix in 1 quart of milk, 1 cup of sugar, and 2 tablespoons of butter.

  3. Combine the custard mixture with the cooled tapioca.

  4. Add the raisins.

Bake

  1. Pour the mixture into a buttered dish.

  2. Bake at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and softens in milk, giving the pudding its thick, slightly chewy body.
Eggs
Set during baking to bind the custard and give it a rich, tender structure.
Milk
Forms the liquid base that cooks with the tapioca and eggs into a creamy custard.
Sugar
Adds sweetness and helps the custard brown lightly at the surface.
Butter
Adds fat for a richer flavor and smoother mouthfeel.
Raisins
Add pockets of concentrated sweetness and chewy texture throughout the pudding.

The step that matters

Heat the tapioca until soft. Tapioca must be fully cooked until it turns translucent and soft; undercooked starch stays firm and grainy, and the pudding will not thicken evenly.

Swap the raisin

How well each one fits the dish's main ingredients (milk, egg, sugar, butter):

  1. Vanillafits better
  2. Figfits about as well
  3. Coconutfits about as well
  4. Raisinthe original

Fit is the average pairing score against milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
