Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Quails
Provide the main meat, which cooks through during roasting and browns on the outside.
Oysters
Stuffing that adds moisture and a briny flavour inside each bird as it roasts.
Butter
Basting fat that promotes browning and a golden, rich skin.
Baking soda
Alkaline wash that helps the skin of the quails dry and crisp during roasting.
Gravy
Thickened, strained sauce that adds moisture and savoury flavour to the served birds.

The step that matters

Uncover the quails and baste while they brown. Roasting covered steams the birds, so they stay pale. Uncovering and basting with butter lets the surface dry and brown through the Maillard reaction, giving colour and flavour.
