Blueberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the sweet milk.

  5. In another bowl, combine the flour and baking powder.

  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  7. Fold in the washed blueberries.

Bake

  1. Pour the batter into a greased baking dish.

  2. Bake for about 45 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and adds richness and tender texture.
Eggs
Bind the batter and add structure and richness as they set in the oven.
All-purpose flour
Provides the main structure that sets the cake as it bakes.
Baking powder
Releases gas in the batter so the shortcake rises and becomes light.
Blueberries
Add moisture, tartness and bursts of fruit flavor through the cake.

The step that matters

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Once flour meets liquid, gluten begins to form. Overmixing makes the shortcake tough, so stop as soon as no dry flour is visible.
