Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the frozen mixture and gives it a smooth, firm body.
- Sugar
- Adds sweetness and keeps the frozen texture softer by lowering the freezing point.
- Oranges
- Supply the juice that gives the sherbet its main flavour and bright acidity.
The step that matters
Dissolve the gelatine in boiling water. Gelatine must dissolve completely before it is added. Undissolved particles stay as specks or rubbery lumps and set unevenly, so the sherbet loses its smooth texture.
