Ingredients

Directions

Make the sponge

  1. Mash the potato and stir in 1 pint of boiling water until dissolved.

  2. Add 1 tablespoon of sugar and let it cool.

  3. In the afternoon, dissolve the yeast cake in a little water and add it to the potato mixture along with enough flour to make a stiff batter.

  4. Before bed, mix 1 quart of flour with 1 teaspoon of lard and 1 teaspoon of salt.

Knead and shape

  1. Knead the sponge for at least 30 minutes, adding more flour until stiff and hard.

  2. In the morning, shape into two loaves and let them rise.

Bake

  1. Bake the loaves for at least 1 hour if they are thick.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potato
Adds starch and moisture that help the dough stay soft and hold water.
Yeast cake
Produces carbon dioxide gas that makes the dough rise and become airy.
Flour
Forms the gluten network that gives the bread its structure and chew.
Sugar
Feeds the yeast so it ferments more quickly during the sponge stage.
Lard
Adds fat that tenderizes the crumb and softens the texture.

The step that matters

Knead the sponge for at least 30 minutes. Kneading develops the gluten network that traps the gas yeast produces. Too little kneading leaves a weak, dense loaf that rises poorly.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
