Shredded Orange Preserves

Ingredients

Directions

  1. Slice the oranges into thin chips, no thicker than 1/16 inch.

  2. Soak and blanch the orange chips as you would for orange preserves.

  3. In a large pot, combine the orange chips and water, then cook until the mixture reaches 220°F (104°C).

  4. Process the mixture for 30 minutes at 170°F (77°C).

  5. To shred the oranges, create a small cutting instrument similar to a hand sauerkraut cutter using a piece of an old hand saw for the blades.
