What each ingredient does

Berries
The fruit that becomes the preserve, with natural pectin that helps it thicken and set.

The step that matters

Filling the jars level full. Filling to the top with hot fruit pushes out trapped air. As the jar cools, this helps create a vacuum seal and limits spoilage from air left in the jar.
