Veal and Ham Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the pastry by mixing flour and water until smooth.

  2. Roll the pastry to about ⅛ inch thick.

  3. Place the prepared veal and ham in the center of the pastry.

  4. Moisten the four corners of the pastry and fold them over the meat to cover it.

  5. Place the pie in a paper bag, seal it, and put it on the broiler.

  6. Bake in a moderate oven at 350°F (175°C) for 45 minutes for a 1-pound pie, 1 hour for a 3-pound pie, 1.5 hours for a 6-pound pie, and 2 hours for a 10-pound pie.
