Ingredients

Directions

Make the cream centres

  1. Combine sugar and cream in a saucepan and boil for 5 minutes, starting the timer when it begins to boil.

  2. Remove from heat and stir in vanilla immediately.

  3. Place the saucepan in cold water and stir continuously until the mixture thickens.

  4. Drop spoonfuls of the cream onto waxed paper and mold into balls once cool enough.

Coat and set

  1. Melt the chocolate in a heatproof bowl set over boiling water.

  2. Roll the cream balls in the melted chocolate, lift them out with a wire fork, and place them on waxed paper to harden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the bulk of the cream and, when boiled, sets into a soft, fudgy centre.
Cream
Adds fat and moisture, giving the centres a smooth, rich texture.
Chocolate
Forms the outer coating that sets firm and gives the balls their flavour.

The step that matters

Timing the boil. Boiling for the full 5 minutes from the moment it starts bubbling controls how much water evaporates and how firm the centres become. Too short leaves them soft and runny; too long makes them hard and grainy.
