What each ingredient does

Pearl barley
Releases starch that gives the drink its body and a mild, grainy flavour.

The step that matters

Boil the barley briefly and discard that water. This first boil and discard carries off surface dirt and loose residue from the grain, so the final drink is cleaner and clearer.
