Why it works: Cabbage and caraway work together. They rank in the top 7% of all ingredient pairs, and cooks put them together in 60 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Ingredients

Directions

Prepare the cabbage

  1. Collect cabbage in autumn and remove the stalks.

  2. Cut the leaves into slices.

Salt and ferment

  1. Layer the sliced cabbage in a vat, alternating with layers of coarse sea salt.

  2. Press the layers down with heavy weights.

  3. Allow to ferment for six weeks, adjusting time based on temperature.

Cook

  1. To cook, stew the sauerkraut in its own liquid with bacon or pork, adding caraway seeds if desired.

What each ingredient does

Cabbage
Forms the bulk of the dish and supplies the sugars and liquid that lactic acid bacteria ferment.
Coarse sea salt
Draws out moisture from the cabbage and keeps harmful microbes in check while fermentation proceeds.
Bacon or pork
Adds fat and savoury flavour to the stewed sauerkraut.
Caraway seeds
Adds a warm, aromatic flavour to the finished dish.

The step that matters

Layering and pressing the cabbage with salt. Enough salt must be evenly distributed and the layers firmly pressed below the brine so the cabbage stays submerged. Exposed cabbage can spoil or grow mould instead of fermenting safely.

Swap the caraway

The recipe marks caraway as optional. How well each one fits the dish's main ingredients (cabbage, pork):

  1. Garlicfits better
  2. Pepperfits better
  3. Thymefits better
  4. Carawaythe original

Fit is the average pairing score against cabbage, pork. Candidates are from the same food group and used in at least 100 recipes.
