What each ingredient does

French leaf gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Castor sugar
Adds sweetness and balances the flavour of the jelly.
Flavouring
Adds aroma and taste, such as port, sherry, lemon or vanilla.

The step that matters

Dissolve the gelatine completely. Gelatine must fully dissolve in the hot liquid before setting. Undissolved granules leave the jelly grainy and can make it set weak or unevenly.
