Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Grease a flat fireproof dish with butter.

  3. Line the dish with a layer of breadcrumbs.

  4. Place the lightly poached eggs on top of the breadcrumbs.

  5. Pour hot sauce over the eggs.

  6. Sprinkle the grated cheese and remaining breadcrumbs on top.

  7. Dot with a few bits of butter.

  8. Bake in the oven until the top is lightly browned.
