Preserving Eggs

Ingredients

Directions

The book gives no oven temperature. The 200°F (93°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Smear eggs with oil or grease and pack them in bran to prevent breaking.

  2. Place the packed eggs in a jar and cork it tightly.

  3. Seal the jar hermetically and submerge it in a vessel of water heated to 200°F (93°C).

  4. Remove the vessel from heat and let the water cool until it is bearable to the touch.

  5. Take out the jar and the eggs will keep for six months.
