How to Boil Fish

Ingredients

Directions

Poach the fish

  1. Wrap the head of the fish with broad tape three or four times to prevent the cheeks from breaking.

  2. Place the fish in a kettle of cold water.

  3. Add salt, sweet herbs, vinegar, and shredded horseradish.

  4. Bring the water to a boil and maintain a gentle boil until the fish is cooked, about 30 minutes for a moderate-sized piece.

  5. Check for doneness by inserting a fish slice into the backbone; if the flesh lifts off easily, the fish is ready.

Serve

  1. Remove the fish and gently unwind the tape.

  2. Garnish with scraped horseradish and serve with liver and roe on the side.

What each ingredient does

Fish
Provides the main protein, which turns firm and flaky as it cooks gently in the liquid.
Vinegar
Adds acidity that brightens the flavour of the poaching liquid and the fish.
Horseradish
Contributes a sharp, pungent aroma that flavours the poaching water and the garnish.
Coarse sea salt
Seasons the poaching liquid and the fish as it cooks.

The step that matters

Maintain a gentle boil. A vigorous boil agitates and breaks up delicate fish flesh, so the water should only simmer gently once the fish is in it.

Swap the horseradish

How well each one fits the dish's main ingredients (fish, vinegar):

  1. Cucumberfits better
  2. Mustardfits about as well
  3. Horseradishthe original
  4. Capsicumfits about as well

Fit is the average pairing score against fish, vinegar. Candidates are from the same food group and used in at least 100 recipes.
