What each ingredient does

Sugar
Feeds the yeast during fermentation and sweetens the finished wine.
Elderberries
Supply the juice, flavor and color that make up the wine.

The step that matters

Heating the elderberries. Heating softens the berries' cell walls, so more juice releases when pressed. Reaching at least 170°F, as the record states, is what the step depends on.
