What each ingredient does

Rice
Cooked until very soft, it breaks down into a smooth base that gives the pancakes their body.
Egg whites
Whipped air gives the thin batter lift and a light, tender structure as it sets.
All-purpose flour
Adds starch that helps the batter hold together and set on the griddle.
Baking powder
Releases gas in the batter, helping the pancakes rise and become lighter.

The step that matters

Pour the batter in small rings and bake slowly. The batter is very thin, so heat that is too high will brown the outside before the centre sets. Slow baking lets the pancakes cook through evenly and firm up enough to lift.

Swap the vanilla

The recipe marks vanilla as optional. How well each one fits the dish's main ingredients (rice, flour, egg, meat, sauce, lemon, cinnamon):

  1. Raisinfits better
  2. Avocadofits better
  3. Limefits better
  4. Vanillathe original

Fit is the average pairing score against rice, flour, egg, meat, sauce, lemon, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
