Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the fricassee

  1. Melt the butter in a large skillet over medium heat.

  2. Add the chicken pieces and cook until browned on all sides.

  3. Stir in the mushrooms and truffles, cooking for 5 minutes.

  4. Pour in the chicken broth and bring to a simmer.

  5. Cover and cook for 30 minutes until the chicken is cooked through.

  6. Remove the chicken and keep warm.

  7. Add the heavy cream to the skillet, stirring to combine.

  8. Season with salt and pepper, then return the chicken to the skillet.

Serve

  1. Garnish with fresh parsley before serving.

What each ingredient does

Chicken
Provides the main protein, which browns for flavour and becomes tender during slow simmering.
Butter
Adds fat for browning the chicken and a rich, savoury flavour to the sauce.
Mushrooms
Contribute savoury, earthy flavour and moisture that becomes part of the sauce.
Truffles
Add a concentrated, aromatic earthy flavour to the dish.
Chicken broth
Supplies liquid for simmering the chicken and builds the savoury base of the sauce.
Heavy cream
Enriches the sauce with fat, giving it a smooth, rounded texture.
