What each ingredient does

Mutton leg
Provides the main meat, which becomes tender and juicy when slowly roasted.
Treacle
Adds sweetness and helps the surface brown and caramelise during roasting.
Fat bacon
Melted and basted over the meat, it adds fat that keeps the surface moist and flavourful.
Garlic
Adds pungent aroma that mellows and perfumes the meat as it roasts.
Shallots
Inserted into the cuts, they add a mild aromatic flavour as the meat cooks.

The step that matters

Basting with melted bacon. Fat that is too cool or added too late will not coat the surface well, so the outside may dry or brown unevenly. Keeping the surface glossy with melted fat promotes even browning and moisture.

Swap the shallot

How well each one fits the dish's main ingredients (mutton, pepper, garlic):

  1. Spinachfits better
  2. Onionfits better
  3. Tomatofits better
  4. Shallotthe original

Fit is the average pairing score against mutton, pepper, garlic. Candidates are from the same food group and used in at least 100 recipes.
