What each ingredient does

Ripe tomatoes
Provide the main pulp, which is cooked down to form the body of the ketchup.
Shallots
Add savory aromatic flavor that builds depth in the sauce.
Garlic
Adds pungent aromatic flavor that mellows during boiling.
Vinegar
Adds acidity that sharpens the flavor and helps preserve the sauce.
Seville orange juice
Adds bright acidity and citrus aroma to balance the sweetness of the tomatoes.

The step that matters

Boiling to thick cream consistency. Boiling reduces water and concentrates the pulp, so the sauce thickens as it cools. Stopping too early leaves it thin, while overcooking can make it too stiff and dull in flavor.

Swap the white pepper

How well each one fits the dish's main ingredients (tomato, shallot, garlic, vinegar, lemon, orange):

  1. Thymefits better
  2. Tarragonfits better
