Boiled Beef

Ingredients

Directions

Prepare the beef

  1. Select moderately lean beef, allowing for 25% weight loss.

  2. Place beef in a crate and plunge it into boiling water with salt.

  3. Boil for 2 to 3 hours.

  4. Remove the crate and pack the meat into cans.

Make the gelatin liquid

  1. Boil down the cooking water from 12 gallons to 6 gallons.

  2. Soak gelatin in cold water for 1 hour, then dissolve it in the boiled water.

  3. Add ground white pepper to the gelatin mixture.

Seal and process

  1. Fill the cans with the gelatin mixture and solder on the tops.

  2. Process 1 lb cans for 45 minutes, 2 lb cans for 55 minutes, 3 lb cans for 65 minutes, and 5 lb cans for 85 minutes at 250°F (120°C).

What each ingredient does

Beef
Provides the meat that cooks tender during long boiling and forms the canned contents.
Gelatin
Sets the cooking liquid into a jelly around the meat as the cans cool.
Ground white pepper
Adds a mild, sharp aroma and seasoning to the gelatin liquid.

The step that matters

Process for the full time at 250°F. Canned meat must be held at a high enough temperature for long enough to destroy harmful microorganisms. Shorter processing for larger cans risks underprocessing, so each can size needs its listed time.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, gelatin):

  1. Tarragonfits better
  2. Celeryfits better
  3. Pepperfits better
  4. White pepperthe original

Fit is the average pairing score against beef, gelatin. Candidates are from the same food group and used in at least 100 recipes.
