What each ingredient does

Beef
Forms the main body of the pressed meat, setting into a firm, sliceable texture as it cooks and cools.
Salt
Seasons the meat and helps draw out and hold moisture within the pressed pieces.
Black pepper
Adds sharp, pungent warmth that balances the richness of the beef.
Vinegar
Adds acidity that brightens the flavor and helps preserve the meat in the cans.
Ground cloves
Contributes warm, aromatic spice flavor to the pressed beef.
Ground cinnamon
Contributes sweet, woody aroma to the seasoned meat.

The step that matters

Pour over the meat in cans and tip the cans. The cooking liquid and vinegar must fully reach the meat so it stays moist and sets properly when pressed. Tipping the cans helps the liquid distribute through the packed pieces, leaving no dry pockets.
