Ingredients

Directions

  1. If using sulphite soda, dissolve 1 oz in 5 gallons of water and soak peeled apples to keep them white.

  2. Chop apples moderately fine.

  3. Wash and clean the raisins and currants, removing any stones.

  4. Chop orange and lemon peel finely, and citron coarsely.

  5. Trim and chop the suet finely, removing all kernels and strings.

  6. Prepare a boiling solution of 3 lbs salt in 12.5 gallons of water and plunge the meat in it.

  7. Change to a 1% salt solution to finish cooking the meat, then chop it finely.
