What each ingredient does

Sorrel
Provides the sour, acidic flavour that defines the dish.
Fresh butter
Adds fat and richness, carrying flavour and giving the reduced mixture a smooth texture.

The step that matters

Cook the mixture in a bain-marie for 15 minutes until nicely reduced. Gentle indirect heat from a bain-marie reduces the herbs slowly without scorching them or the butter. Overheating can burn the butter and turn the herbs bitter, so the mixture should be checked near the end.

Swap the onion

How well each one fits the dish's main ingredients (sorrel, lettuce, chervil, butter):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original
