What each ingredient does

Eggs
Yolks enrich the base while whipped whites lighten the pudding and help it rise.
Bread crumbs
Provide the bulk and body of the pudding, soaking up butter and liquid.
Butter
Adds richness and moisture, and carries flavour through the pudding.
Caster sugar
Sweetens the pudding and helps give a tender, moist crumb.
Preserved ginger
Supplies the main ginger flavour and bits of chewy texture.

The step that matters

Folding in the egg whites. Whites hold air only when whisked to stiff peaks, and overmixing or stirring vigorously knocks that air out. Gentle folding keeps the pudding light instead of dense.

Swap the ginger

How well each one fits the dish's main ingredients (bread, butter, lemon, sugar, egg):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against bread, butter, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
