Directions

  1. In a warm bowl, combine ½ cup water, 1 ounce cane or grape sugar, dry egg white, and carbonate of soda.

  2. Mix until well combined to form an emulsion.

  3. Slowly add 1 to 2 ounces of olive oil while stirring.

  4. Add another ½ cup of water to achieve milk-like consistency.

  5. For cream-like texture, dissolve 30 grains of gelatin in the mixture if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dry egg white
Helps the oil and water stay together as a stable emulsion.
Olive oil
Supplies fat, giving the mixture richness and a creamy mouthfeel.
Gelatin
Thickens the liquid and adds body for a cream-like texture.
Cane or grape sugar
Adds sweetness and a mild flavour to the milk.

The step that matters

Slowly add the olive oil while stirring. Adding the fat gradually while stirring lets the egg white proteins surround small oil droplets, forming a stable emulsion. Pouring it in all at once can break the mixture into separate oil and water layers.

Swap the grape

How well each one fits the dish's main ingredients (egg, olive, gelatin):

  1. Lemonfits better
  2. Coconutfits better
  3. Vanillafits better
  4. Grapethe original

Fit is the average pairing score against egg, olive, gelatin. Candidates are from the same food group and used in at least 100 recipes.
