Why it works: Thyme and cardamom share more aroma than cooks usually use. They rank in the top 3% of all ingredient pairs, and cooks put them together in 46 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork
Provides the lean meat that forms the body and bite of the sausage.
Solid fat pork
Adds fat that keeps the filling moist and tender as it cooks and smokes.
Coarse sea salt
Seasons the meat and helps draw out moisture and bind the filling.
Saltpetre
Helps preserve the meat and gives the cured sausage its pink colour.

The step that matters

Drying the sausages before smoking. If the casings are not dried carefully, they can wrinkle and the surface may not take smoke evenly. Even drying sets the casing so the sausage keeps a smooth, firm skin.
