What each ingredient does

Cranberries
Provide the tart fruit flavour and the pectin that helps the jelly set.
Sugar
Adds sweetness and body, and helps the jelly hold its shape as it cools.

The step that matters

Rubbing the mixture through a sieve. Pushing the cooked cranberries through a sieve removes skins and seeds, giving a smooth, clear-textured jelly rather than a grainy one.
