Fruit Gelatins

Ingredients

Directions

  1. Soak the gelatin in cold water.

  2. Add enough boiling water or fruit juice to dissolve the gelatin.

  3. Stir in sugar to taste and a speck of salt.

  4. Make up the required amount of liquid with fruit juice and cold water.

  5. Add slices of fruit or nuts if desired.

  6. Pour into a mold and set in a pan of ice water to harden.

  7. For a fruit sponge, omit one-quarter of the liquid.

  8. When the jelly begins to harden, beat in the stiffly beaten egg whites until thickened.

  9. Pour into a mold.

  10. For bavarian cream, add 1 cup of whipped cream instead of egg whites.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (gelatin, sugar, egg, cream):

  1. Almondfits better
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Nutsthe original

Fit is the average pairing score against gelatin, sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
