Method for Making Salt-Rising Bread

Ingredients

Directions

  1. Heat the milk in a saucepan until it's near boiling, but do not let it boil.

  2. Mix the heated milk with enough maize meal to create a thick batter.

  3. Wrap the vessel with paper and a heavy flannel cloth.

  4. Place it in a warm spot at about blood heat for several hours until fermentation occurs and a sour odor develops.

  5. Stir in the salt once fermentation is established.
