Pineapples, Canned
Ingredients
Directions
Peel the pineapples and remove the eyes and woody core.
Cut the pineapples into whole or sliced pieces.
Prepare a heavy syrup by mixing water and refined cane sugar.
Fill the cans with the prepared fruit and pour the syrup over it, filling the interstices.
Cap and hermetically seal the cans.
Heat the sealed cans in an open bath at 212°F (100°C) for 20 minutes or at 240°F (115°C) in a closed bath for 8 minutes.
Vent the cans by puncturing the caps, then immediately solder the holes.
