Fried Liver

Ingredients

Directions

Prepare the liver

  1. Cut the liver into ¼‑inch thick slices and soak them in cold salt water for 1 hour.

  2. Rinse the liver with warm water, wipe it dry, and dip each slice into seasoned flour.

Fry

  1. Heat enough lard, beef dripping, or bacon fat in a frying pan to cover the bottom.

  2. Fry the liver slices until both sides are deep brown.

  3. Pour the remaining grease over the liver and serve, or make gravy.

Make the gravy

  1. For gravy, melt butter or beef dripping in the pan, add boiling water, and season with pepper and salt.

  2. Gradually stir in blended browned flour, let it boil, and pour over the liver before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Liver
Is the main food, cooked quickly so the slices brown while staying tender inside.
All-purpose flour
Forms a thin seasoned coating that browns during frying and helps the surface crisp.
Blended browned flour
Thickens the gravy and adds a toasted, savory flavor.
Butter or beef dripping
Adds fat and rich flavor to the gravy.

The step that matters

Fry until deep brown on both sides. Liver is lean and cooks fast; frying too long toughens and dries it, while stopping too early leaves the coating pale and the flavor flat. Browning comes from the Maillard reaction at the surface.
