Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the crisp, watery body that makes up most of the dish.
Coarse sea salt
Draws water out of the cucumber slices, which then softens and seasons them.
Vinegar
Adds acidity that brightens the flavor of the cucumbers.
Olive oil
Adds fat and smoothness that carries the flavor of the seasoning.

The step that matters

Rinse off the salt and drain. Salt left on the slices makes the dish too salty and keeps drawing out water. Rinsing removes the surface salt, and draining removes excess liquid so the dressing is not diluted.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, pepper, vinegar, olive):

  1. Capsicumfits better
  2. Tomatofits better
  3. Lettucefits better
  4. Onionthe original

Fit is the average pairing score against cucumber, pepper, vinegar, olive. Candidates are from the same food group and used in at least 100 recipes.
