Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Form the main body of the dish and release moisture that forms the stewing liquid.
Dripping or butter
Adds richness and fat, giving the cooking liquid a smooth, glossy body.
Flour
Thickens the cooking liquid as it stirs in, giving the stew a smooth, lightly bound texture.

The step that matters

Stir in the butter and flour without letting it boil. Flour dispersed in fat and added to hot liquid thickens it smoothly, but boiling can break the sauce and make it grainy or thin. Gentle stirring keeps the texture even.
