What each ingredient does

Eggs
Egg white sets around the yolk, forming the poached shape while the yolk stays soft.
Vinegar
Acid helps the egg white coagulate faster, keeping it from spreading in the water.

The step that matters

Slipping the egg into the water. Egg white begins to set on contact with hot water, so a freshly cracked egg slipped in gently holds its shape. Pouring the egg into a small plate first lets you lower it carefully and avoid a tear that would spread the white.
