For Making Cider Vinegar

Ingredients

Directions

  1. Pour fresh cider into clean barrels and let it ferment until active fermentation stops.

  2. Rack off the cider, clean the barrels, and fill them four-fifths full.

  3. Place the barrels outdoors in sunlight and insert a long-necked bottle into each bunghole.

  4. When freezing weather arrives, move the barrels to a warm cellar and cover the bunghole with cheese cloth.

  5. Once the desired acidity is reached, rack off the vinegar, clean the barrels, fill them completely, and seal with a tight bung.
