Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Forms the thick base that sets firm enough to cut into shapes.
Milk
Hydrates the ground rice so it cooks into a thick, smooth mixture.
Cream
Adds richness and fat, giving the base a softer, creamier texture.
Sugar
Sweetens the base and adds to the golden browning during frying.
Egg
Helps the bread crumb coating stick and forms a crisp, golden crust.

The step that matters

Cool the base until thick and stiff before cutting. Ground rice thickens as it cooks and sets as it cools. If the mixture is cut while still soft, the fritters lose their shape and may break apart in the hot oil.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, cream, sugar, lemon, butter, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against rice, milk, cream, sugar, lemon, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
