Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the cold meat into neat pieces.

  2. Season the meat with pepper and salt, and mix in the chopped onion.

  3. Break the bones and place them at the bottom of an earthenware pot.

  4. Add the seasoned meat on top of the bones.

Assemble and bake

  1. Pour in the cold water or gravy.

  2. Cover the meat with a layer of mashed potatoes.

  3. Top with freshly washed potato pieces as needed.

  4. Bake in a 400°F (200°C) oven until heated through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold mutton or beef
Provides the meat that is heated through and becomes tender in the gravy.
Mashed potatoes
Forms a starchy topping that insulates the meat and browns in the oven.
Potatoes
Add bulk and starch, cooking into soft pieces that moisten the dish.
Chopped onion
Adds sweetness and savoury aroma as it softens in the pot.

The step that matters

Covering the meat with mashed potatoes. The potato layer must fully seal the meat so it heats through evenly and the surface browns rather than drying out. Gaps let steam escape and leave the meat dry.

How well each one fits the dish's main ingredients (mutton, pepper, potato):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
