How to Cure Meat for Head Cheese

Ingredients

Directions

Cure the meat

  1. Cure the meat in a brine made from 1 lb Freeze‑Em‑Pickle, 7 lbs coarse sea salt, and 5 gallons water for 10 to 14 days.

Cook the parts

  1. Boil the heads slowly until the meat can be easily stripped from the bone.

  2. Boil hog rinds and hog fat at the same time.

  3. Remove rinds when almost cooked, chop or grind them fine, and cut the fat into 1‑inch square blocks.

  4. Boil about 15 lbs of cured hog tongues and cut them into strips.

Combine and season

  1. Combine 10 lbs fresh hog back fat, 15 lbs cured hog tongues, 25 lbs hog rinds, 60 lbs cured hog head meat, 5 lbs Bull‑Meat‑Brand flour, and 6 to 8 oz Zanzibar Brand head cheese seasoning.

  2. Add 1 lb White Berliner Brand konservirung salt, adjusting salt to taste.

What each ingredient does

Cured hog head meat
Provides the main body of meat that sets the head cheese texture.
Hog rinds
Supply gelatin that helps the mixture set into a firm, sliceable loaf.
Hog back fat
Adds moisture and richness, keeping the meat from drying out as it sets.
Cured hog tongues
Contribute meaty flavour and tender texture to the mixture.
Bull‑meat‑brand flour
Helps bind the mixture and absorb liquid for a cohesive texture.
