Ingredients

Directions

  1. Chop the pork and belly finely.

  2. Roast the shallots in butter until light yellow, then rub them fine with a pinch of salt and add to the pork mixture.

  3. Mix in the fine salt, ground mace, thyme, white pepper, white ginger, and dried mushrooms.

  4. For wrapping, use a belly from which the ribs have been cut, about two-tenths of an inch thick.

  5. Place a slice on the table, add three-fourths of an inch of the pork mixture, leaving four inches uncovered on each side.

  6. Layer well-salted boiled tongue on top, then add goose livers, truffles, and boiled green pistachios.

  7. Cover with another layer of the pork mixture.
