Ingredients

Directions

Prepare the meat

  1. Chop the pork and lean beef together.

  2. Season the meat with salt, white pepper, powdered cane sugar, powdered saltpetre, garlic, cardamom, and rum.

  3. Mix well and chop until the mixture is about the size of beans, wiping the knife frequently.

  4. Stuff the mixture firmly into salted beef casings (about 13 inches long).

Cure

  1. Let the sausages hang for several hours.

  2. Brine the sausages for 6 hours or rub with fine salt.

  3. Place the sausages on a board and set aside for 12 hours in a cool cellar.

  4. Wash the sausages with cold water and dry with a cloth.

Dry and smoke

  1. Allow to dry in a well-ventilated area at 50°F to 55°F until the casing is red.

  2. Smoke lightly with a mixture of beech and oak shavings and a few juniper berries.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Its fat content gives the sausage moisture and a juicy, tender bite.
Lean beef
Adds meaty structure and firmness to the chopped mixture.
Salt
Draws out and binds meat proteins and helps preserve the sausage.
Powdered saltpetre
Helps preserve the meat and gives the cured sausage its red colour.
Powdered cane sugar
Adds a little sweetness and supports curing and browning.
Rum
Adds aroma and flavour to the meat.

The step that matters

Drying at cool temperature until the casing is red. Drying slowly in a cool, ventilated space lets moisture leave gradually and the casing firm and colour through curing. Drying too warm or too fast can case-harden the surface and trap moisture or spoil the meat inside.

Swap the white pepper
