Ingredients

Directions

Prepare the meat

  1. Chop the beef and pork into pieces about the size of a walnut.

  2. Add the salt, white pepper, cane sugar, saltpeter, and cognac to the meat mixture.

  3. Continue chopping and mixing until the mixture is about the size of a pea.

Season and stuff

  1. Rub the chopping block with garlic until well permeated.

  2. Stuff the mixture into beef middle guts or butts, tying them with two-threaded twine from thick to thin ends.

Dry

  1. Dry the sausages for four to five weeks instead of smoking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main meat structure and savory flavor of the sausage.
Lean pork
Adds fat-free meat body and savory flavor alongside the beef.
Back lard
Supplies fat that adds juiciness and a smooth texture to the cured mixture.
Coarse sea salt
Draws out moisture and seasons the meat, helping it bind and preserve during drying.
Powdered saltpeter
Helps preserve the meat and gives the cured sausage its color during long drying.

The step that matters

Chopping to the size of a pea. Chopping too coarsely leaves uneven texture and poor binding, while over-chopping smears the fat and makes the sausage greasy and dense. Keep the mixture evenly sized and the fat in distinct pieces.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, pork, sugar, clove, garlic):

  1. Gingerfits better
  2. Cinnamonfits better
  3. Allspicefits better
  4. White pepperthe original

Fit is the average pairing score against beef, pork, sugar, clove, garlic. Candidates are from the same food group and used in at least 100 recipes.
