  3. Cook sweetbreads in boiling water for 5 minutes.

  4. Remove sweetbreads from the water.

  5. Fry sweetbreads with marrow fat, onions, carrots, and allspice for 15 minutes.

Make the soup mixture

  1. Boil beef essence until reduced to one-third.

  2. Add sweet milk, salt, white pepper, mace, mushroom ketchup, and flour to the reduced beef essence to make a batter.

  3. Boil the batter mixture for 5 minutes while stirring.

  4. Strain the mixture through a fine sieve.

Can and process

  1. Fill cans with 18 oz. fried sweetbreads and 4 oz. of the soup mixture, leaving vents open.

  2. Process the filled cans in a retort for 1 hour and 30 minutes at 15 lbs. pressure, keeping the exhaust closed.

  3. Shut off the steam after processing.

  4. Allow the pressure to exhaust.

  5. Quickly seal the vents.

What each ingredient does

Sweetbreads
Provide the main meat, which becomes tender and mild after soaking and cooking.
Marrow fat
Adds richness and fat, helping the sweetbreads brown during frying.
Beef essence
Supplies the concentrated savory base that flavours the soup mixture.
Flour
Thickens the reduced beef essence into a batter-like sauce.
Sweet milk
Adds body and mild richness to the soup mixture.
Mushroom ketchup
Adds deep savoury, umami flavour to the sauce.

The step that matters

Processing in the retort. Canned low-acid meat and sauce must reach full pressure and time to be safely sterilised. Shutting off steam and exhausting pressure correctly keeps the seal intact, so the cans are not left under-processed or damaged.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, carrot, allspice, beef, milk, mace, mushroom):
