Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides lean meat structure that binds the cheese when cooked and pressed.
Pork
Adds fat and moisture, keeping the cut meat tender after simmering.
Pickled calf breast
Contributes gelatinous connective tissue that sets as the cheese cools.
Bacon
Adds fat and savoury flavour, keeping the cubes moist and rich.
Coarse sea salt
Draws out moisture and seasons the meat, helping it bind and firm.

The step that matters

Pack it firmly into wide casings or bladders. Loose packing leaves air gaps and uneven texture, so the cheese can crumble when sliced. Firm packing removes air and lets the meat bind as it cooks and cools.
