What each ingredient does

Lean beef
Provides the main meaty body and firm bite of the sausage.
Lean pork
Adds meaty flavor and works with the beef to form the bulk of the mixture.
Fat salt pork
Supplies fat that keeps the sausage moist and juicy as it cooks and smokes.
Salt
Seasons the meat and helps extract proteins that bind the mixture together.
Coriander seed
Contributes a citrusy, aromatic flavor that defines the sausage's seasoning profile.

The step that matters

Knead the mixture well to exclude air. Trapped air pockets can cause spoilage and uneven texture, and kneading with salt develops a cohesive, dense sausage that holds together when sliced.
